Notes

Don’t overcrowd oil. Peas folded last keep pop. Mrs Ball’s IN the sauce is the secret.

What is the difference between vetkoek and magwinya?

It’s the same fried bread – vetkoek is Afrikaans, magwinya/amagwinya is isiZulu/Sotho. Same golden, crispy outside, fluffy inside dough. Made here in a cast iron potjie over coals.

Why is my vetkoek oily or doughy inside?

Oil was not hot enough. Heat to 180°C – a small piece of dough should sizzle and float in 3-4 seconds. Don’t overcrowd the potjie. Fry 4-5 minutes turning once until deep golden, then drain on paper.

Can I bake vetkoek instead of deep frying?

You can bake at 190°C for 18-20 minutes, but you won’t get the classic crispy, slightly chewy crust. For the traditional vetkoek, frying in 5cm deep oil is essential.

Can I make the curry mince ahead?

Yes, it tastes even better the next day. The Mrs Ball’s Fruit Chutney cooked INTO the mince (3 Tbsp) balances the curry heat. Add the frozen peas in the last 5 minutes so they stay bright. Also great with just apricot jam + cheddar as an alternative filling.

How do I store and reheat vetkoek?

Best fresh from the oil. Store unfilled vetkoek 1 day in a sealed container, reheat 5 minutes in a hot oven at 180°C to re-crisp. Don’t microwave – it toughens.
